Vanilla Chia Pudding

Chia is a tiny black seed rich in fiber, protein, antioxidants and omega-3 fats. When soaked in water for about 30 minutes, the seed forms a gel. The gelling action of chia, along with its fiber and protein, can help keep you satisfied longer.


Chia seeds have a nut-like flavor and can be added to smoothies, baked goods, yogurt and pudding. For a grab-and-go breakfast, prepare this recipe the night before and pour into individual cups. Add some fresh fruit on top and enjoy first thing in the morning. Or save for a light dessert later in the day.


Servings: Serves 4


Ingredients:


  • 2 cups unsweetened almond milk
  • 2 Tablespoons agave nectar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 6 tablespoons chia seeds
  • 2 cups fresh fruit




1. Whisk the milk, agave, vanilla extract, and cinnamon in a bowl, then transfer to a large cup. 



2. Place the chia seeds in the bowl, and pour the liquid over the chia seeds. Stir until the seeds are evenly mixed in. Wait 5 minutes and stir. Then 5 minutes later, stir again. 




3. Let the mixture sit in the refrigerator for at least an hour, or refrigerator overnight. 








4. To serve, top with fresh fruit. The pudding will keep in the refrigerator for up to 4 days. 





Variation: For Matcha Green Tea Chia Pudding, omit cinnamon and add 1 teaspoon Matcha Green Tea powder.
