Sweet
potatoes are not a hard vegetable to love. And even better, they are a very
nutritious food source for you as well. With a high vitamin C and beta-carotene
content, a low glycemic index, and high levels of potassium, it has been
labeled as a “superfood.” The most
nutritious way to eat a sweet potato is with the skin on, but for best results
in this recipe you will need to peel them. This is a simple and delicious treat that often pleases the
most difficult guest. Serve instead of bread or mashed potatoes to gain all of
the health benefits of this super tuber!
Ingredients
(Serves 8)
4 medium
sweet potatoes, peeled and cut into thick fries
4 teaspoons
olive oil
1/8
teaspoon salt and pepper
2 baking
trays
Preheat the
oven to 450ยบ F and space out the baking racks in the oven. Place 2 sliced sweet
potatoes on each baking tray. Sprinkle with 2 teaspoons olive oil on each and
toss (best to use hands to coat all fries with a little oil). Space out fries
so they get crispy, and don't steam. Place in the oven for 15 minutes. Then
turn fries with tongs, rotate baking trays and place back in oven for another
10 minutes or until golden and crispy to your liking. Keep an eye on them in
the last 5 minutes, to make sure they don't burn as the natural sugars
caramelize in the baking process. Serve alongside Roasted Kale and Jerk Chicken
or a BBQ entree.
