Easy weeknight side: Roasted Green Beans




A lot of friends and family want to cook more but are intimidated by long lists of ingredients and complicated instructions. I decided to focus on some easy weeknight recipes that take little time to prepare. The most important thing at the end of the day is that you spend time with the people you love.

This is another simple recipe that will go well with a variety of Mediterranean dishes like Fish en Papillote (in parchment), Chicken Piccata, or Salmon Bowl.

Ingredients:
  • 1 lb. green beans
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cherry tomatoes
  • 3 cloves garlic, sliced thin

Toss together and bake 400 F for 20-25 minutes or until slightly wilted
