Today on the Simple Cooking Cooking Show on Instagram LIVE, I teamed up with my cousin in Mexico, Paloma!
Chilaquiles is a simple recipe that uses chips (made or store bought) and a quick salsa roja (red). The chips are part soft-part crunchy. It's a delicious brunch dish paired with eggs, beans, and cheese. Its one of the first dishes I order when I land in Mexico. I look forward to having that first big brunch meal with family. Then, the table is decorated beautifully with huevos divorciados, sopes, tostadas, pan dulce and other Mexican favorites.
You can choose to make your own chips or use some from a bag like she did. It's a pretty simple recipe and is so delicious.

Chilaquiles de Paloma
(serves 1-2)
Ingredients:
1 small bag of chips (about 2 cups)
2-3 tomatoes
¼ white onion
2-3 serrano chiles (depending how spicy you like it)
