10-Minute Vegan Ceviche from Costa Rica | No-Cook Recipes





Summer meals in full swing! 🌞Don’t feel like slaving over the stove getting hot and bothered in the summer heat? Make this 10-minute vegan ceviche from Blue Zone, Costa Rica.  Ceviche is typically a dish with chopped raw fish lightly cooked with lime juice. Instead, Hearts of palm are the star here. They are a great substitute for a white fish ceviche in texture and taste. Much of the flavor comes from the lime juice, chiles and cilantro anyway. If you don’t like it spicy, omit the chiles and just use red bell pepper. You can also use boiled cauliflower florets in place of hearts of palm.

10-Minute Vegan Ceviche from Costa Rica

Serves 2-3

Ingredients: 

* 1 cup hearts of palm(fresh, canned or jarred), small chop
* ½ onion, chopped
* 1 T cilantro, chopped
* 1-2 limes, juiced
* 2 small red peppers, chopped
* 1 habanero chile, minced (optional)
* 1 tomato, chopped (optional)

Directions: 

Mix all ingredients together. Add pepper or salt to taste. (Can keep in fridge a couple days and gets even better)
